More on How To Cook Pork Ribs

Small wars have been fought over how to cook pork ribs. Some argue for the grill while others insist the oven is the only way to go.

I guess it depends on what you're really after. For tender, fall off the bone delicious ribs, I'd crank up the oven. But Southern purists will tell you the oven is wimpy, and that you need to stick with smoke and indirect heat of a charcoal or gas grill.

Some contend that real men cook outdoors.

Of course, the choice between inside and outside cooking is not the only one to be made. In the divine pursuit of supreme ribs there is the critical issue of flavor to be considered. You see, the meat by itself is actually fairly tasteless. Therefore a good dose of dry rub and/or the liberal application of a sauce is in order.

This is where many of the first shots in the war over pork ribs are exchanged. There are a wide variety of killer barbecue sauces from which to choose. They tend to fall into categories. Sticky Kansas style red sauces have a definite following, but don't forget about unique Lexington vinegar sauces, or savory South Carolina mustard sauces.

BBQ is delicious, and a plain Memphis style dry rub often wins out over any other choices!

Wet sauces are basted on, or even mopped on.

This is making me very hungry. For me, the closest place for ribs is Smokey Bones. Not as good as home cooking, but hey, it works in a pinch!
